1) Is there a shortcut key for displaying the Paragraph dialog box ?
No, but one can be easily created/added.
File > Options > Customise Ribbon, Customize
Select Home Tab and scroll down to "FormatParagraph".
Press the shortcut key (Ctrl + P) and press Assign

2) What is the difference between selecting and highlighting ?
Highlighting - This is marking the text and changing the background colour in the document.
Selecting - This is used for manipulating text.
